We at AirLobster believe maintaining high quality

standards means more than simply taking care of
what we ourselves do, but also being part of an

effort to improve the handling and knowledge of

all parties before and after processing, from

capture to plate. Obviously it is important to

make sure that we are on the ball, but our

products need to be handled well when we are

no longer part of the chain. As such, we

contribute to the efforts of education in airline

handling in particular. An area that has had

significant impact in maintaining the status of the
Southern Rock Lobster as

one of the most sought after

commodities worldwide is

the handling by the fishermen

themselves. I believe that if the product is looked after right from the start,

then thechances of maintaining high standards are greatly enhanced. In this

regard, the fishermen in particular need praise.
